**Ambience**: There’s nothing like a hot pot to warm up the winter. Located on the 7th floor of the Changning Longzhimeng shopping mall, the entire restaurant boasts an irregular layout. The owners have opted for a bold red as the primary color, accented by green and white, creating a vibrant and fashionable design. Large glass walls enhance the visual openness, doubling the area’s aesthetic appeal. Patrons are left with a lasting impression upon entering, and this warm environment is a welcome respite from the winter chill.
**Service**: The staff provide garment bags for diners’ outerwear and use a cute sign to shield patrons from any potential splashes when refilling soup. The condiment area features a prominent sign reminding guests to wear masks. The waitstaff are readily available to attend to diners’ needs.
**Culinary Delights**: In my memory, a winter hot pot features a side of bubbling spicy flavor and another of steaming original taste, interwoven through the ‘mandarin duck’ style, all merging into a pot of culinary adventure. When visiting for a hot pot feast, it’s imperative to order the tripe. Not only is the tripe known for its nutritional value and crisp texture, but the unforgettable taste comes from their water buffalo tripe. The large, thick leaves with numerous fine bristles are the secret behind Jiudingxuan’s uniquely crisp tripe.
Activities: Culinary delights, photography, a touch of bourgeoisieThere’s the red beef and goose intestines, the white thousand-layer tripe and bamboo fungus shrimp滑, the green spinach, and sesame oil dipping sauce, all arranged to fill a large table. The spicy heat reflects the excitement on our faces as the broth bubbles in the pot. We unabashedly reach for the ingredients, savoring each bite, and eagerly anticipate the next, not wanting to pause even for a moment. The beads of sweat emerging from our pores are a testament to the charm of hot pot, dispelling any sense of winter’s cold.
#Jiuding Signature Crispy Tripe
Served on ice, the tripe is incredibly fresh and large in size. By dipping the tripe in the spicy hot pot broth for seven up and down motions within 15 seconds, it absorbs the rich and robust flavors of the broth. Chewing on the crispy tripe is immensely satisfying.
#Thousand-Layer Tripe
The fine bristles of the thousand-layer tripe can maximize the absorption of the pot’s rich and spicy flavors, making each bite a delightful and memorable experience.
#Fresh Goose Intestines with Raw Egg
The goose intestines are served with a raw egg in the middle. Before eating, mix the egg with the intestines and then dip them in the hot pot broth for 10 seconds. The resulting texture is crisp and resilient.
#Beef and Mutton
Sliced and kept fresh on an ice plate, each bite after cooking in the hot pot broth is tender and succulent. The delicate texture conquers the palate, filling the mouth with a rich sense of satisfaction and deliciousness.#Luncheon Meat Cubes
These cubes are incredibly tender and smooth, testing your chopstick skills. They are so slippery that they often escape your grasp and slide away before you can secure them.
#Bamboo Fungus Shrimp Glide#
Handmade shrimp glide retains the texture of fresh shrimp to the greatest extent. Wrapped in bamboo fungus, it is chewy and tender, making it an essential dish to order when having hot pot.
#Crispy Glutinous Rice Cakes#
The sweet and not greasy red syrup is poured over the super crispy exterior of the glutinous rice cakes. With a thin layer of crisp fragrance and a soft and glutinous texture inside.
#Taro and Red Bean Ice Sand#
Crystal clear, with some jelly. Matched with mini taro balls and red bean paste, it tastes refreshingly sweet and is very spicy-relieving.
